Many people wonder why they get charged one rate at a Super 8. airport hotels and another at a Hilton when they are using nothing more than a bed. If that is the case, they may be staying at the wrong type of hotel facilities and could use a little guidance as to what to expect based on the top of property that they are staying. Lodging comes in three different tiers and each one of them is meant to service a specific market.

The lowest level of amenities will be received at extended stay properties. These are properties that are strictly meant for longer stays that will not cost as much money as any other type of hotel or motel. The reason the rates are so low is because they do not usually offer the types of amenities that people would generally expect from a hotel.

It is a rare extended stay property that will have a rate anywhere near $100/night. The longer the guest is staying, the more likely that the rate will be lower. For this generous rate, they get very little other than a bed and a parking spot. There will usually be laundry facilities of some type and maid service will be very limited.

One step up would be considered limited service properties. These are properties like the Garden Inn or Days Inn. Room rates are a little higher, but there is not much more in the way of the typical hotel amenities. Owners of these properties make some of the highest profits in the industry so you can expect them to be clean, but they will be run very tight.

Maid service in limited service properties will usually be a daily occurrence, unless they are at the bottom tier of the scale. They may even only offer it on request. While some of them offer meeting rooms and banquet space, it is very limited. There may or may not be a restaurant on property and will probably offer a continental breakfast for their guests.

The hotels with the best hotel facilities are known as full service hotels. For these amenities, the guest can expect to pay considerably more. A nice travel tip is to look for full service hotels that are surrounded by limited service hotels. They will have to drop their rates to stay competitive in their market.

Types of full service hotels would be properties such as Hilton and Marriott. They are typical of full service hotels in that they treat their VIP members like gold. Their highest levels can expect free breakfast, a welcome amenity, honor bar with free hours d’ oeuvres and express check ins. These types of properties are generally required to have a full service restaurant, health spa, snack shop along with high end banquet facilities.

If a travel is doing nothing more than sleeping in their room, why waste the money at a full service hotel. A place like the Garden Inn will still offer a free continental and a high level of service. Seattle Slew–the last living Triple Crown winner–died on May 7, 2002 at the age of 28. As one of only 11 Triple Crown winners in history, he is by default one of the greatest horses in the history of thoroughbred racing. Of those 11 legendary animals, Seattle Slew was the only one to complete the Triple Crown with an undefeated record, as well as the only one to have been purchased at a public auction. After retiring in’78, Slew became one of the most important and successful stud horses in the history of the sport. He sired 1,066 foals including 102 stakes race winners. Among this impressive group of offspring was the’84 Kentucky Derby winner, Swale. All told, Slew’s offspring have won an amazing $76 million dollars at the race track. Slew’s stud fee of $300,000 made him a very profitable horse even after his racing career was over. Slew wasn’t a particularly attractive horse, but he had the toughness of a championship boxer and the sort of intestinal fortitude and desire that can only be given by The Creator.

The Seattle Slew story started at a public auction in Kentucky–not exactly a venue expected to produce a future champion. Slew, in particular, was an unlikely heir to greatness. He was somewhat clumsy looking due to a front right forefoot splay and had a shuffling gait at trot. Slew wasn’t a beautifully majestic creature like his Triple Crown winning predecessor, Secretariat. In fact, he could have been considered borderline ugly–to the extent that he was nicknamed ‘Baby Huey’ by the Keeneland staff. What wasn’t apparent at the time was Slew’s mixture of championship intangibles–competitive desire, toughness, heart and enthusiasm. His owners had unwittingly stumbled onto an equine Muhammad Ali, and his competitive fire quickly became apparent to his trainers and jockeys. His first race came at Belmont Park in’76, and he entered–and won–three races as a two year old giving a glimpse as to what like ahead.

As a three year old, he quickly gained notice by winning his three Derby prep races, including the prestigious Wood Memorial. In the Derby, Slew got off to a terrible start as he stumbled from the gate much like War Emblem did in the 2002 Belmont. Unlike 2002’s Triple Crown contender, however, Slew was able to recover from that miscue and basically force his way through a pack of other horses to position himself at the front of the field at the quarter mile pole. He went on to win the Derby by a length and 3 quarters. Another tough victory in the Preakness set up his Triple Crown winning run at the Belmont, which he won by 4 lengths.

Slew ran in a few races as a 4 year old but in the pre-Breeders’ Cup days there wasn’t as many opportunities for an older horse. He retired to stud in’78. We’ve already discussed his prowess in the breeding shed, siring a number of first rate horses such as the aforementioned Swale, and the’92 Belmont champ AP Indy. Slew stood at Three Chimneys Farm in Midway, Kentucky from’85 until early 2002 when he was moved to Hill ‘n’ Dale Farm in Lexington, KY following a spinal operation.

Slew may not have earned the appreciation he deserved in his prime, coming so closely on the heels of the charismatic’73 Triple Crown winner Secretariat–arguably the greatest thoroughbred race horse in history. The jockeys that rode him, however, understood fully what a special animal they were dealing with. Jockey Angel Cordero gave Seattle Slew this lofty praise: “If I had a chance to take any horse in the world, if someone said your life is depending on riding one horse to win, I would take (Slew). I rode 44,000 horses, but he was special, he was different. He was muscled, like a wrestler. He ran different than any other horse. It was like he came from another planet.”

After his death in 2002, Slew was buried at Hill ‘n’ Dale Farm in Lexington, Kentucky under a statue in his image.

In a previous article, we talked about the complications with fusing local Californian products in global-style cooking. Then, of course, I proposed that the answer to that problem, is spice.

Spices are one of the most important ingredients in gourmet cooking. They are like the beads and baubles in a woman’s wedding dress, the corsage in the man’s tuxedo, the flower petals in the red carpet, the wedding statue on the cake. I use the analogy of marriage because California cuisine IS the marriage of two or ,probably, more cuisines. Simply put, spices are and will be always, an integral part of your cooking gear if you plan to tackle Californian cooking.

The amount of spice you employ per dish is going to be small, tiny even. In a gallon of soup, your spice might only reach a teaspoon. A tablespoon is surely cutting the limit, but it is manageable. Point is, you will have to mix and match spices of differing types and amounts to reach the desired flavor, that will not hide, but complement your dish. Spices are meant to ACCOMPANY the dish, not hide its true flavor. It is there to guide, to strengthen and to supplement the flavors. A tasteless soup gains depth through the right spice.

Vermont had been mostly dependent on what the good earth produces for them. Agriculture, in Vermont, produces at least a good market of close to two billion six hundred million dollars of income affecting directly, and indirectly the state of Vermont’s economy.

In the previous two centuries, logging had been the forerunner of Vermont’s economy. This over cutting and serious exploitation of the mountain forests had made Vermont’s floral system less appealing over the years however. Most of the forests that have been cut down are used for farms, but over the recent centuries, these farms had slowly disappeared. Vermont’s land and forest were allowed a chance to recover during that time.

Vermont’s apparent lack of industrial areas had also saved it from building and industrial failures, most of some of the surrounding states are still suffering from. The only industry that still exists up until today, (and is currently successful) is Vermont’s dairy industry. Most of Vermont’s forests are second-generation.

Dairy farming has been one of the more profitable industries in Vermont. At least a thousand farms still exist, though this is at an alarming figure. While milk production rose thanks to new technology, the market share of the state slowly declined. A large amount of this milk is also shipped into the Boston market and most farms may not sell their milk without a certification from the Commonwealth of Massachusetts.

Another area of industry that is slowly growing in Vermont is the manufacture, packing and sales of artisan foods, fancy and novelty items and usually those from patisserie shops. Some of these brands include Cabot Cheese, Vermont Butter and Cheese, ginseng, Lake Champlain Chocolates, King Arthur Flour, and Ben and Jerry’s Ice Creams. Items include high-quality paint, teddy bears and snowboards which are exported from the state.
